Yummy Frittata Recipe
It’s been raining for days now and I am in serious need of some comfort food to get me through this cruddy weather.
When I was little my great-grandmother would often be home waiting for me after school. And while every other child in America was having PB&J as an after-school snack, I was chowing down on Nonna’s Italian Frittata. To this day, this tasty dish always brings a smile to my face. Give it a try:
Ingredients
10 eggs
1 Tbs heavy cream
1 clove garlic
1/3 cup ricotta cheese
1/4 cup olive oil
1 diced or shredded potato
1/2 cup Mozzarella cheese, shredded
salt and pepper to taste
*add a cup of chopped veggies for additional flavor: spinach, bell peppers or asparagus are great choices
Directions
Peel and blanch the potato and dice/shred. In a bowl, blend together the eggs, cream, ricotta cheese, salt, and pepper and set aside.
In a large skillet heat the olive oil over medium heat.
Add garlic, potato and vegetable of choice and cook on medium heat for 3-5 minutes.
Lower heat and add the egg mixture and half of the mozzarella cheese; stir well so that all ingredients are evenly mixed.
Cover the pan and cook for 10 minutes on low heat until the mixture is completely solid and remove from heat.
Place remaining mozzarella cheese on top and allow to melt.
Carefully place it on a serving dish and serve by the slice.
